I learned from my mother, and she from Italian friends in Chicago.
Sauce: Saute garlic and onions in olive oil until clear (low heat). Tomatoes, tomato sauce, Italian parsley, oregano and other seasonings in a stew pot. Pour it in and add beef neck bones.
Meat balls: cook in the oven for 20 min, then add to the sauce. Let it simmer for no less than 3 hours. The longer the better. The sauce and meatballs are even better after a day of rest in the fridge. (remove the neck bones before serving) Oh, and one last thing. I add just a bit of cumin and cinnamon to the sauce and use fresh herbs if you can. And two eggs. Non-bread-crumb meatballs (and meatloaf) never stay together as well as the kind with bread, which is why the non-flipping aspect of this is so appealing.Kristin @ Going Countryhttps://www.blogger.com/profile/00221544641416039741noreply@blogger.comtag:blogger.com,1999:blog-6506305897742962637.post-45370171889906699532014-08-12T19:31:24.266-06:002014-08-12T19:31:24.266-06:00Re the sauce: I suggest making the vinegar balsami...Re the sauce: I suggest making the vinegar balsamic and also throwing in a couple shakes of Worcestershire sauce.Beckyhttps://www.blogger.com/profile/03380052395141552814noreply@blogger.comtag:blogger.com,1999:blog-6506305897742962637.post-75366719568718416092014-08-12T18:55:50.216-06:002014-08-12T18:55:50.216-06:00This looks great!!
