Did you know you can make your own brown sugar? Brown sugar is literally just white sugar and molasses. I knew I could make it. I even knew how to make it. And yet, I have not been making it.
Logically, I knew I should. I use a lot of it, given how much I bake. It's much cheaper to make than to buy, especially since I prefer dark brown sugar, which is always more expensive than light brown sugar. And I already have a gallon of molasses.
I kept telling myself I should start making it next time I ran out. But then my laziness would overcome me and I would buy more brown sugar when I was at the store.
However.
Here we go.
I finally did it. I used two tablespoons of molasses per cup of white sugar, which makes very dark brown sugar.
I mixed it in my food processor. It wasn't hard, of course, although I did overfill the food processor and have to split the sugar in half to get it all combined evenly.

I used to delegate to my little people. Just give Poppy a big bowl of sugar and a couple of forks to mix the molasses in with
ReplyDeleteSince I don't bake much any more, I am a little stunned by the idea of a gallon of molasses (but when I DO bake, those little 12 oz bottles disappear fast). One can also just free-form brown sugar by adding a dollop to any recipe that calls for it, just cutting down the sugar a bit. (Most recipes call for an excessive amount of sugar, so if one is at all health conscious, one is reducing it anyway). MIL
ReplyDeleteI was doing that, but it was annoying dealing with molasses every single time I baked. It tends to get everywhere.
DeleteMy kids say they can taste when I use Molasses instead of store bought brown sugar. I have my doubts. But I usually don't have molasses on hand, so they don't have many chances to test this claim.
ReplyDeleteMy kids love molasses to the point where they'll even eat it straight, so I don't have this problem. :-)
DeleteI make brown sugar sometimes, but usually I can get it on sale for cheaper than I can make it. Molasses is expensive -- at least in the little jars. I've never seen a larger jug of it.
