Well, first off, some of them will ripen on a windowsill slowly even if they're picked green, so long as they've at least STARTED to turn, meaning they're not that kind of whitish green but a darker green. As for the really green tomatoes, there is the ubiquitous fried green tomatoes, which are pretty damn good. Another nice thing is green tomato mincemeat. It's asweet filling for pies or turnovers. It freezes really well, and can also be canned with a pressure canner.
