When I was kid, I would take potatoes out of the bin in our basement and hide them until they sprouted. For some reason, this fascinated me. When it came time to plant the garden, my dad would just ask where the potatoes I hid were and use those.
Recently, we've found that onions stored too long in the back of a cupboard will start to mutate as well.
Yes, it could happen to potatoes anywhere. But imagine, if you will, going down into our dark, dank, freaky cellar, reaching into the burlap bag of potatoes and feeling the growths all over them. It's unnerving. I always expect something to jump out of the bag at me.

I think that happens to potatoes anywhere if you forget about them long enough.
