My poison of late...eat it for days on end...
Summer couscous: Cut up into bite size pieces: lots of tomatoes, preferably cherry but any kind will do, also 2 zucchini, 2 summer squash, one sweet onion. Toss and put a few pats of butter around and roast at 400 for 45 min, mixing. Roasts in butter but mostly in veggie juice. Take 1.5 cup couscous and pour 3 cups boiling water over. Mix, cover and let stand for at least 10 min. Here's the crucial part: now stir fry the couscous in olive oil until it is not dry. I don't know how much olive oil, just add to taste. Plain couscous is no good to me and makes me cough! But w/ the olive oil it's delish. Add veggies, stir and ok... my bad part here... add a little sugar. The sugar just makes it so delish. But of course you can skip that part and feel healthy and virtuous!
Coffeemate. I know it's made of Satan's hydrogenated devil oil or whatever, but I don't care. MMMM.

That sounds like a great breakfast. I have recently discovered that I love chickpeas in all forms. Who knew?

PS -- it was living in Asia that I realized that they added sugar -- or ketchup! -- to every single dish...
