I really dislike peeling hardboiled eggs. Even when the shells come off easily, the little pointy bits of shell always make my fingers hurt after a couple of eggs. And then, of course, everyone knows those particularly infuriating eggs that refuse to release their shells without half the egg going with them.
So, except for when I'm making deviled eggs, I don't actually shell them. Instead I use a spoon. You can do this for anything in which the eggs are going to be chopped up anyway.
Start by using the edge of a spoon to tap and gently crack all the way around the equator of the egg. Then break it in half and pull the two halves apart.
Next, use the spoon to scoop the egg out of the shell on one half.
Let the spoon do the work.
Repeat with the other half, using the spoon to scrape off any egg that's sticking to the shell.
And that's it. A shell-less hardboiled egg with no sore fingers or shredded egg sticking to the shell.
Peeling eggs was always a pain! I know you don't have a bunch of kitchen appliance laying around but one year for Christmas my daughter bought me an Instant Pot. Game changer!! I told her it is the most expensive egg cooker I will ever own :). 5 minutes under pressure, 5 minutes natural release and the egg shells practically fall off! I actually do use the pressure cooker for a lot of different dishes, corn on the cob, baked potatoes, roast....but the smooth boiled eggs amaze me every time.

Do you do 5 min in ice water after? That's the recipe I follow and it works well. Though I do 4 min under pressure and natural release as my eggs are only large.
DeleteIt's handy to use the instapot so I can do 8 -10 eggs to have on hand for low carb snacks and for vegetarians children to get protein..

ReplyDeleteMaybe I should just say DITTO here but came here to say you HAVE to try them in the Instant Pot! I second the 5-5-5 method - 5 minutes cooked on high pressure, 5 minutes natural release and 5 minutes in an ice bath - the shells come off SO easily!! I somehow ended up as my family's designated "Deviled Egg" maker & have to make Deviled Eggs for 20-30 people several times a year (Easter, 4th of July, Thanksgiving & Christmas!) and I was like you & LOATHED peeling them. After I tried this method, it was a total game changer for me & saves me TONS of time. Highly recommend!! :)

If you don't have an instant pot...try steaming the eggs instead of boiling. I do 11 minutes for room temp eggs in a covered steamer/colander over a couple inches of boiling water, then straight into an ice bath for another 11 minutes. Easiest to peel hard cooked eggs I have ever made!
