Did you know you can make your own brown sugar? Brown sugar is literally just white sugar and molasses. I knew I could make it. I even knew how to make it. And yet, I have not been making it.
Logically, I knew I should. I use a lot of it, given how much I bake. It's much cheaper to make than to buy, especially since I prefer dark brown sugar, which is always more expensive than light brown sugar. And I already have a gallon of molasses.
I kept telling myself I should start making it next time I ran out. But then my laziness would overcome me and I would buy more brown sugar when I was at the store.
However.
Here we go.
I finally did it. I used two tablespoons of molasses per cup of white sugar, which makes very dark brown sugar.
I mixed it in my food processor. It wasn't hard, of course, although I did overfill the food processor and have to split the sugar in half to get it all combined evenly.

Since I don't bake much any more, I am a little stunned by the idea of a gallon of molasses (but when I DO bake, those little 12 oz bottles disappear fast). One can also just free-form brown sugar by adding a dollop to any recipe that calls for it, just cutting down the sugar a bit. (Most recipes call for an excessive amount of sugar, so if one is at all health conscious, one is reducing it anyway). MIL
I was doing that, but it was annoying dealing with molasses every single time I baked. It tends to get everywhere.
My kids say they can taste when I use Molasses instead of store bought brown sugar. I have my doubts. But I usually don't have molasses on hand, so they don't have many chances to test this claim.
I make brown sugar sometimes, but usually I can get it on sale for cheaper than I can make it. Molasses is expensive -- at least in the little jars. I've never seen a larger jug of it.
I bought it online.
My kids love molasses to the point where they'll even eat it straight, so I don't have this problem. :-)
Hi, Kristin, it's JD. I popped in to say that today is my last day of work! The company gave me a lovely meal, with steak grilled at the office, and with my daughters and son-in-law in attendance. I was gifted with flowers, a card, and a very nice gift certificate to an antique/thrift store. It's been a lovely day and I am excited to go home for good, now. You asked if I would tell you about it, so here I am. My kids are planning to do more later, but we have an extended family funeral to attend this weekend. Everyone asks me how it feels, and I still don't know! It feels WEIRD to know I'm done with an outside job. I can't wrap my head around not going to work, yet, so no real plans are made at this point.
I'll probably drop in here now and then. I'd like to purchase a home computer first - I detest writing on my phone.

I suspect it will take some time to get used to your new life, but I have no doubt you will make good use of your now-abundant free time. I hope you do come by every once in awhile. So happy your child is okay. Can't imagine anything scarier. I didn't write down everything we ate this week, but will include what I remember. We played golf yesterday, so again ate at the nearby dive. It was just my husband and me yesterday since our son only gets every other Friday off and had to work today, we so played a different day. I had a tossed salad and Cajun chicken alfredo. My husband had his usual grilled mahi sandwich, with their house made chips and cole slaw. This week we also had leftover chicken cacciatore with Italian bread and applesauce, crispy fish sandwiches with home made oven fries and applesauce and a simple salad. We also had Bourbon marinated salmon with baked potatoes and caesar salad; baked parmesan flounder with boiled new potatoes, roasted zuccini, Italian bread and caesar salad. We also had turkey subs with chips and applesauce. As you can see, we eat a lot of fish, and applesauce is a favorite of my husband. Looks like I filled the week, not just in order.
