Short version: Leftover potato soup, omelets, still-frozen green beans
Long version: I had quite a bit left of the pureed potato soup that I had made the previous day. Some children elected to have just that. Then I made a cheese omelet for A., me, and the one child who dislikes soup. A. had soup with his omelet. The soup-hater had some leftover rice with his.
Saturday
Short version: Sonic for the girls, more omelets for the boys
Long version: Poppy and I had an outing this day to go into town and do a Walmart stock-up. She came with me because one of the mission churches in our parish is an hour away from our house, but right on the way home from the town with the Walmart. Poppy wants to see every church in our parish, and neither of us had been to this one, which only has Mass the second Saturday of the month.
So we went to town, did our errands, had some Sonic for an early dinner, and went to Mass on the way home.
Long version: This is a very popular meal with all of my children. I myself fail to see what is so exciting about canned tuna in a patty, but it makes them happy.
I made a rash promise to one child who was dreading a day of testing that I would make custard for dessert. But then in the end, I didn't want to use so much of my dwindling milk supply for custard. My next thought was Mexican wedding cookies, which are just as beloved as custard. I got the butter all soft and the nuts crushed and chopped, as needed for the recipe, when I remembered I used all my powdered sugar for the First Communion coconut cake .
Boooo.
However! I knew it's possible to make powdered sugar with granulated sugar and cornstarch. I duly looked this up and put the correct proportions of each (1 cup sugar:1 tablespoon cornstarch) into the food processor. After a few minutes of whirling around, it was not really powdery. Still grainy. So then I got out my blender and tried that. Much better, if not quite as fluffy as store-bought powdered sugar.
Annoying to have to use two machines, but now I know if I ever have to make it again that the blender is the way to go.
Since I had the food processor out and dirty already, I used it to make the cookies, which came out very well and were very much appreciated by all.
Wednesday
Short version: Leftover chili at home, FFA food out
Long version: I went to the FFA awards dinner, as did the older two boys who are in FFA. It was at the (singular) restaurant in the village. They had a buffet of green chile chicken enchilada casserole, red chile beef enchilada casserole, beans, rice, and homemade flour tortillas. It was so good. Too spicy for me, of course, but that's what sour cream is for.
Thursday
Short version: Lamb steaks, leftover mashed potatoes, asparagus or still-frozen green beans
Long version: Nah.

Fri- rotisserie chicken because I hit Walmart and it was on sale. Vegetables?
Sat- pasta, leftover chicken, leftover sausage from freezer, garlic bread, random chicken nuggets leftover from lunch, leftover veg. Trying to clean out fridge.
Sun-I cooked a little food I like. Italian sausage links ( was supposed to be grilled but lost interest), hot dogs, string beans,chips, appleslices. Chocolate cream pie with a walmart brand Graham crackers crust - that was surprisingly good.
Mon- supposed to go to husband's workplace picnic, which was a great plan as I was in big city with boy for dr appt. Came home to find out that maybe there wasn't said picnic. Okay, then... Hotdogs, chips, apple slices.
Tues- rotisserie chicken again because it was easy. Rolls, broccoli, yummy rice ( made with broth and butter).
Wed- roast beef ( cheapest beef at Sam's club per lb!), dinner rolls, mashed potatoes, broccoli, string beans.
Thurs- repeat of Wed, except picky eater picked up nuggets and fries on his way home from volunteering. Banana bread.
What a beautiful little church. To go to all your diocesan churches, you'll need a lot of patience. I imagine most are even further away. Great goal, Poppy!
Oh, we're not trying to go to all the churches in our diocese. That would take years. :-) We're in the Archdiocese of Santa Fe, which is HUGE. We're just trying to go to all the churches in our parish, which is still a very large area. This was one of the farther ones, at over an hour away.

But I LOVE Frito Pie (I grew up on the Texas/Mexico border) but my midwestern kids think it unfit to consume. Weird.
Fri- potato soup, bread, and birthday desserts for the baby!
Sat- 1st communion for #7, we opted to have it catered by a Mexican store and Italian bakery. It was much easier to feed 40 people that way (our family and two other families). Teen boys came to our house after the party so of course we had to order them pizza to eat in addition to all the post 1st communion food!
Sun- jambalaya, bread, salad, and leftover cake
Mon- Filipino chicken adobo over rice with zucchini
Tues- Beef Birria tacos with rice and beans, melon, cucumbers, and cookies (all packed in containers while the boys played baseball games in the pouring rain.
Wed- Sloppy Joes on buns, chips, carrots, grapes
Thurs- it got to nap time with the 2yo before I realized I had 6 kids with baseball games both in town and out of town and no dinner plans. So, I found frozen chicken strips and made a spinach salad with oranges. I have learned that during baseball season the boys all eat two dinners so I made 32 servings of chicken and gave everyone ice cream at 9pm. Teenage boys are no joke when it comes to food!
I had never had Frito pie before moving here. People like to say that the midwest has it too, but that's those walking taco things in a bag and is not the same thing.
How many chest freezers do you have? I'm looking at you finding 32 servings of frozen chicken strips and thinking it must be at least two . . .
I have asparagus envy. I have one clump, and that is all that survived the walnut root toxicity. Maybe someday___MIL
